I am drinking a glass of the second beer in the Saison Series–Summer Night: a raspberry dark saison. Made with toasty vienna malt, chocolate wheat malt, dark candi syrup, and Heritage raspberries, this beer is complex: dark yet dry, chocolately yet crisp and subtle, with a pleasant malt backbone and touch of raspberry flavor. It is very drinkable, stopping just short of roasty. French saison yeast leaves a velvety mouthfeel but super dry finish. I can only compare it to drinking some very good dark chocolate with a bit of raspberry.
This is a brand new style of beer that a few breweries are starting to experiment with. I think that I hit the nail on the head with my interpretation and would literally change nothing from the first time I brewed it. This is a wonderful beer that is totally unique and I cannot wait to share it with you all.
